Salmon Pasta Salad
  1. Pat the salmon dry and place in a bowl. Sprinkle all spices over the salmon, add the honey, olive oil, salt and pepper, and rub everything in well.

  2. Preheat the air fryer to 180°C. Air fry for 10 minutes, or until just cooked through.

  3. Cook the pasta in well-salted boiling water according to packet instructions and cook for an additional minute. Drain, rinse under cold water until completely cool, then drizzle with a little olive oil and toss so the pasta doesn't stick.

  4. Add the pasta, rocket, sun-dried tomatoes, mini cucumbers, red onion, shaved parmesan, salmon, mayonnaise, pesto and lemon juice to a large bowl.

  5. Season with salt and cracked black pepper, then mix well until everything is evenly coated.
