Get the honey in a small pot and over medium low heat bring it to 250f. Cool and reserve
Get milk, cream, and earl grey in a pot and place over low heat. Steep for 30 minutes. You don't want it to simmer or boil, just a nice warm steep
Strain and remove the tea. Add the vanilla, caramelized honey, and salt
While the tea is still warm whisk in the gelatin. If you have any that doesn't dissolve you can place it back on the stove and gently warm it up while whisking
Pour into vessels and chill overnight
Top with figs and enjoy
