One-Pot Chicken Parmesan Pasta

Ingredients:

1 lb boneless, skinless chicken breast, diced

Salt and pepper to taste

2 tbsp olive oil

3 cloves garlic, minced

3 cups chicken broth

2 cups marinara sauce

12 oz pasta (penne or rigatoni)

1 cup shredded mozzarella cheese

½ cup grated Parmesan cheese

Fresh basil, chopped, for garnish

Instructions:

Sauté the Chicken: Season diced chicken with salt and pepper. In a large pot, heat olive oil over medium heat and cook chicken until golden brown. Remove from the pot and set aside.

Sauté Garlic: In the same pot, add garlic and cook until fragrant, about 1 minute.

Add Broth and Pasta: Pour in chicken broth, marinara sauce, and pasta. Stir to combine, then bring to a boil.

Cook the Pasta: Cover and simmer for about 10-12 minutes, stirring occasionally, until pasta is al dente and most of the liquid is absorbed.

Add Cheese and Chicken: Return the chicken to the pot. Sprinkle mozzarella and Parmesan cheese on top, stirring until melted and combined.

Garnish and Serve: Garnish with fresh basil before serving.
