Heat oven to 425°F.
Mix 2 tablespoons Momofuku Hot Honey, Momofuku Soy Sauce, Momofuku Toasted Sesame oil, and 3 tablespoons of olive oil until smooth.
Toss broccoli with olive oil and Kosher salt on a sheet pan. Roast for 8 minutes.
Remove from the oven, and arrange salmon within broccoli. Spoon a third of the glaze over the salmon, then season with salt and return to the oven and roast for 6 minutes. Remove from the oven and top salmon with another third of the glaze and roast for 6 more minutes, or until the salmon reaches 145°F. Remove from the oven.
Mix 2 tablespoons of Momofuku Hot Honey into the remaining glaze and spoon it over the salmon.
Boil noodles for 2 minutes, then drain and top with sauce packet and scallions.
Build your bowl with the noodles, pieces of salmon, and broccoli. Top with sliced scallions and toasted sesame seeds, if desired.
