Slice part of the apple very thinly, then blend 100 g of the remaining apple until smooth.
Mix the apple purée with 1 egg, 40 g oat flour, 3 g baking powder, 1 tsp sweetener, and 1 tsp cinnamon.
Pour into a small ramekin, layer the thin apple slices on top, and bake at 350°F for about 25 minutes.
Brush with a little sugar-free apricot jam for the perfect glossy finish.
