Cook the meat: In a large pot over medium heat, add the ground turkey or beef. Cook for 5–7 minutes, breaking it apart with a spoon, until browned. Drain excess fat if needed.
Add vegetables: Stir in diced onion, garlic, and bell pepper. Sauté for 3–4 minutes until softened.
Add remaining ingredients: Mix in diced tomatoes, beans, broth, tomato paste, and all seasonings. Stir to combine.
Simmer: Bring to a gentle boil, then reduce heat and simmer uncovered for 15–20 minutes, stirring occasionally, until chili thickens and flavors meld.
Taste and serve: Adjust seasoning if needed. Serve hot with optional toppings.
