Mix sugar with aquafaba.
Once it got a little bit lighter, add the olive oil and whisk until fully incorporated.
Add the zest of a lemon, some oat milk, flour, baking powder, and vanilla sugar or vanilla extract.
Add a small pinch of salt and mix it in.
You can leave your cake like this or use apples, plums, or whatever fruit/berry you like and fold it in.
Pour the batter into a baking tray lined with parchment paper on the bottom and buttered on the sides.
Bake at 175 degrees Celsius (350 Fahrenheit) for 35-40 minutes.
