First, marinade the beef with soy sauce, sesame oil, Chinese cooking wine, baking soda, salt, pepper, cornstarch and oil. Set aside for at least 20 minutes.
In a pan, heat 1 tbsp of oil over high heat. Add the beef and stir fry the beef until golden brown for 2-3 minutes. Set aside.
Next, blanch the broccoli with hot water for at least 30 seconds - 1 minute. Set aside.
In the same pan, heat another 1 tbsp of oil over high heat. Add the garlic and shallot. Stir fry for 1 minute or until fragrant.
Add in the broccoli and saute for 1 minute. Then, add the day old rice followed by the sauce and sauté on high heat for 2 minutes.
Add the cooked beef and give it a final mix.
Plate your fried rice, garnish with chili oil, sesame seeds and fried shallots. Enjoy!
