Preheat oven to 400°.
Spray the cups of a popover pan or muffin pan with non-stick cooking spray.
In a large mixing bowl, whisk together milk, eggs, and oil. Add flour and salt; whisk until smooth.
Stir in shredded cheese and cooked, crumbled bacon.
Fill popover cups half full.
Bake at 400° for 35-40 minutes, until popovers are firm. Popovers are best when served immediately.
