Melt 2 tablespoons butter (or olive oil) over medium heat.
Add 1 cup of the mix; toast lightly for 1–2 minutes.
Stir in 2 cups hot water, bring to a boil, then cover and simmer 15–20 minutes until tender.
Fluff with a fork and taste for seasoning — a little squeeze of lemon or sprinkle of parmesan takes it over the top.
