Steak Au Poivre
  1. Season your steak. let it come to room temperature before cooking your steak, about 30 min.

  2. Heat a pan, add oil and cook steaks for 4 minutes, flip over and do the other side.

  3. Add butter, garlic & rosemary, thyme and green peppercorn & baste with infused butter. only baste towards the end to add a little more butter and lower heat to medium.

  4. Take steaks out of the pan. add shallots and let sauté for about 2 min, season with s+p.

  5. Add cognac and let alcohol cook off about 2 mins, add beef broth and cook for another 2 mins then add heavy cream and let sauce reduces.

  6. Add your steak back in the sauce for a minute.

  7. Enjoy;)
