Cauliflower-cheese Soup
  1. In a large saucepan cook cauliflower

  2. Saute onions in melted butter until soft.

  3. Season with salt and pepper, add flour, and continue to cook over medium heat for about 5 minutes, stirring constantly.

  4. Slowly add milk, cook until thickened

  5. Reduce heat, and add broth, cheese, cauliflower and mustard

  6. Do not allow to boil after adding cheese.
