Lightly steam cauliflower (or use frozen florets, microwaved just enough to soften). Let cool.
Blend all ingredients until velvety smooth. Add a few drops of water if needed.
Pour into ramekins or silicone molds.
Freeze 4+ hours.
Serve slightly thawed — texture is like frozen mousse or thick spread.
