To a sauce pan, add the adzuki beans, bay leaves, mirin, garlic, and black pepper.
Add the stock, making sure the beans are fully covered by the liquid with at least 1” above them.
Cover and bring the broth up to a simmer.
When simmering, turn the heat down to low. Allow to cook until the beans are tender, about 2 hours.
Strain, if extra liquid, and enjoy!
