Rice Pudding With Raisins
  1. Preheat oven to 300°F (150°C). Lightly grease your 9×13 in (23×33 cm) casserole dish with nonstick spray or butter.

  2. In a large bowl, whisk the eggs until smooth. Add sugar and whisk until slightly pale and combined.

  3. Stir in milk, salt, vanilla, cooked rice, raisins, and spices until evenly mixed.

  4. Pour mixture into the prepared casserole dish. Place the dish inside a larger baking pan and carefully fill the outer pan with hot water until it reaches halfway up the sides of the pudding dish.

  5. Bake for 90 minutes (1 hour 30 minutes to 1 hour 45 minutes). After 30 minutes, gently stir from the bottom edges to redistribute the rice and raisins for an even texture.

  6. Bake until the center is softly set with a slight jiggle. Cool slightly before serving. It thickens as it rests.
