Boil the potatoes to release moisture before baking (IMPORTANT* add baking soda and salt) for about 8 mins
Drain and toss in bowl to roughen them up, add butter and a little parmesan cheese.
On a baking sheet with parchment paper, spread them out as best you can and bake the potatoes at 425°F (convection on) to get them super crispy. Flip as needed.
Salt and add more parm.
