Creamy Southwest Style Chicken Alfredo

  1. Season 200g chicken with tsp mild chilli powder, oregano, paprika then season with salt and pepper then add 5g runny honey, mix and add to a frying pan

  2. Boil 150g dry pasta in salted water I used penne

  3. When the chicken is cooked remove from the pan and then add 10g butter I used lurpak lightest and then add a diced white onion

  4. Add a heaped tsp of garlic purée and then add 250g chopped tomatoes. Slowly stir in 90ml light single cream and leave to simmer. I then added a sprinkle of the above herbs again

  5. Add your chicken back in then add in your cheese I used 30g @eatlean cheese and 25g mozzarella and add your pasta

  6. I topped with some chopped coriander and scattered some Parmesan over
