Jalapeño Peach Hot Honey Pepper Jelly

🛒 Ingredients:

• 3 cups ripe peaches, peeled and finely chopped

• 1 cup jalapeños, finely chopped

• 1 red bell pepper, finely chopped

• 2 cups granulated sugar

• ½ cup honey

• ½ cup apple cider vinegar

• 2 tablespoons lemon juice

• 1 tablespoon lime juice

• 1 teaspoon lemon zest

• ½ teaspoon salt

• ½ teaspoon red pepper flakes

• ¼ teaspoon smoked paprika, optional

• 1 pouch liquid fruit pectin, 3 oz

👩‍🍳 Directions:

1️⃣ Prep the fruit and peppers: Peel and finely chop the peaches. Finely chop the jalapeños and red bell pepper. For a milder jelly, remove the jalapeño seeds.

2️⃣ Cook the peach mixture: Add peaches, jalapeños, red bell pepper, sugar, honey, apple cider vinegar, lemon juice, lime juice, lemon zest, salt, red pepper flakes, and smoked paprika to a large saucepan.

3️⃣ Bring to a boil: Cook over medium-high heat, stirring often, until the mixture reaches a full rolling boil.

4️⃣ Simmer for flavor: Reduce heat slightly and simmer for 8–10 minutes, stirring often, until the peaches soften and the mixture looks glossy.

5️⃣ Add the pectin: Stir in the liquid pectin. Return to a full rolling boil and boil hard for 1 minute, stirring constantly.

6️⃣ Check the texture: Remove from heat. Skim off foam if needed. The jelly will look loose while hot but will thicken as it cools.

7️⃣ Jar it up: Carefully ladle the hot jelly into clean glass jars. Leave a little space at the top.

8️⃣ Cool and chill: Let the jars cool at room temperature, then cover and refrigerate for at least 4 hours before serving.
