Brown the chicken mince for around 6 minutes with 1 tbsp oil. Add 2 tbsp soy sauce, 1 tbsp honey and optional fish sauce if you have some.
Cook the noodles according to packet instructions.
Rinse the noodles in cold water then add to a bowl with 1 tbsp oil (sesame if you have some).
To blender cup, add the peanut butter, 2 tbsp soy sauce, ½ tsp garlic granules, 1 tbsp honey, water and a pinch of salt and pepper. Blend until smooth. Add to the base 4 meal prep containers.
Add the cooked mince. Allow it to cool for a couple of minutes, then add the noodles, cucumber and cabbage. Seal and place in the fridge.
When it's time to eat, pour into a bowl and toss to combine. Top with optional chilli flakes/oil and a crack of black pepper. Enjoy!
