Make the crispy rice paper gimbap rolls
Cook the short grain white rice and mix with sesame oil
Prepare the gochujang tofu by mixing the gochujang, coconut amino, rice vinegar, maple syrup and water
Slice the cucumber, avocado and shred the purple cabbage
Assemble the rolls by placing the rice paper, rice, gochujang tofu, cucumber, avocado and purple cabbage
Coat the rolls in sesame seeds
Fry the rolls in avocado oil until crispy
