  2. Heat oil in a pan and sear the chicken legs until a nice char forms on the outside

  3. While the chicken cooks, blend tomatoes, tomatillos, onion, jalapeño, and garlic together and set aside

  4. Remove the browned chicken and set aside

  5. Add diced onion to the same pan and cook until translucent

  6. Add the rice to the pan and toast until golden brown

  7. Pour in the blended sauce and water, then stir in the consomé de pollo

  8. Nestle the chicken back into the pan and top with cilantro

  9. Cover the pan and cook on low heat for 25 minutes

  10. Turn off the heat and let the dish rest covered for 10 more minutes before serving
