No-bake Cheesecake
  1. Make no-bake cheesecake filling. In the bowl of a stand mixer, beat 8 ounces cream cheese, ⅓ cup sugar, 1 teaspoon vanilla, and 2 teaspoons lemon juice, if using, for 2 to 3 minutes, or until light and fluffy. Slowly pour in ¾ cup heavy cream and beat on medium-high speed for 3 minutes or until thick and creamy.

  2. Spread into crust. Spread the cheesecake mixture into the graham cracker crust. Refrigerate for at least 4 hours, or until firm.

  3. Serve. Top with your favorite toppings. Slice and enjoy!
