Mac and cheese (read disclaimer below ingredients)

    Disclaimer: store bought, pre shredded cheese is preferred if you want to skip the first step, just ensure that your cheese is coated in corn/potato/tapioca starch.

  1. In a bowl place your shredded cheese and add a bit of the starch, mix well and then separate the coated cheese from excess starch.

  2. Place Macaroni to boil, following package instructions

  3. While Macaroni is boiling, in a separate saucepan/pot add the can of Evaporated milk and bring it up to temp over medium/medium low heat (4-6 on the dial). Add the cheese (either pre-shredded or from step 1) and then mix until melted.

  4. Once finished boiling, drain the water from the mac (reserve 1 cup) but do not rinse, pasta should be slightly chewy for ideal texture.

  5. Add your cheese sauce (step 3) into your Macaroni pot along with ¼ cup of pasta water, fold gently with a spatula or a spoon to avoid turning your Mac into mush, add more water to achieve desired consistency.

  6. Shove as much of the completed Mac and cheese into your mouth as you can physically accommodate.
