Roasted Cauliflower Cheese And Ham Hock Pie
  1. Preheat the oven to 200C/180C Fan/Gas 6. Put the cauliflower in an ovenproof dish and season with a little salt and pepper. Roast for 20 -30 minutes, or until tender and starting to brown. Give it a prod to test that it's soft.

  2. For the sauce: melt the butter in a saucepan, add the flour and cook for 1-2 minutes, or until a light golden colour. Gradually add the milk, stirring all the time until smooth, then cook over a gentle heat for 3-4 minutes, stirring until thickened.

  3. Add nutmeg. Turn the heat down add the mustard and cheese. Taste and season.

  4. Pour the sauce over the roasted cauliflower and mix through the ham hock and allow to cool completely.

  5. Cut two rounds of puff pastry - I did a 23cm and 26cm and fill the smaller one with the cauliflower mix and egg wash the sides and pop the lid on and crimp.

  6. Put back in the fridge for half an hour - and turn the oven on to 180°C fan.

  7. Egg wash the outside and pop a hole in the top.

  8. Cook for 30 mins until golden all over. LET IT REST and Thank me later 😀
