Cauliflower With Bacon, Taleggio Cheese And Breadcrumbs
  1. Preheat oven to 160C (fan forced).

  2. Cook cauliflower in boiling, salted water for approximately 4 minutes, until just tender.

  3. Drain well and place into a greased baking dish.

  4. Fry the onion and bacon over medium heat for approximately 4 minutes, until they start to change colour. Add parsley and stir to combine.

  5. Spoon mixture over the cauliflower.

  6. Melt butter over medium heat. Stir in the flour and stir continuously to prevent lumps forming.

  7. Slowly add milk, whilst stirring, and bring to the boil.

  8. Add the Taleggio cheese and stir until melted through.

  9. Season with salt and pepper, then add nutmeg, mustard and half of the Parmesan cheese.

  10. Pour sauce over the cauliflower and top with remaining Parmesan and breadcrumbs.

  11. Bake for 15 minutes until golden.
