Preheat oven to 350°F/ 175°C
Grease an 20cm (8 inch) cake pan lined with parchment paper
Add eggs to a large bowl and lightly beat them.
Whisk the eggs, olive oil, maple syrup, lemon juice, zest, salt and vanilla until smooth.
Add in the almond flour, coconut flour, and baking soda.
Pour in a cup of milk and stir until smooth.
Pour the lemon cake batter into your cake pan.
Bake for around 30-40 minutes (baking time varies depending on the baking pan used, therefore make sure to check your cake in between by pricking the center with a toothpick. You want your cake moist but the toothpick should come out clean, when the cake is ready).
Place the cake on a cooling rack and allow to cool completely before frosting.
For your frosting, mix cream cheese, maple syrup, and vanilla in a bowl and stir until smooth.
Frost it and enjoy!!
