Sweet Potato Energy Balls
  1. Cook and mash the sweet potato if not already done. Let it cool completely.

  2. Combine the other ingredients and roll into 6 small balls using your hands.

  3. Mix together the topping and then spoon on top. We finished ours with a sprinkling of sesame seeds and left over coconut.

  4. Leave to set for 15 minutes in a fridge and enjoy!
