One Pan Chicken With Curry Mayo Sauce
  1. Dab 4 skin-on bone-in chicken thighs dry with a paper towel and add to a bowl

  2. Drizzle chicken with avocado oil and season with salt, pepper, ½ tbsp paprika, ½ tbsp chili flakes, and ½ tbsp onion powder

  3. Mix well and let sit for 2 to 6 hours or longer

  4. Preheat oven to 410F

  5. Remove chicken from fridge and bring to room temperature

  6. Whisk together 4 tbsp mayo, 2 tbsp red curry paste, juice of 2 limes, and a small pinch of salt

  7. Divide sauce in half - brush remainder over the seasoned chicken thighs

  8. Place chicken on a wire rack and bake in the oven at 410F for 35-40 minutes

  9. Remove chicken from the oven and plate

  10. Serve with your choice of base, salad, and the reserved sauce
