Eclair Cake
  1. Prepare frosting.

  2. Line a 9x13” glass or Tupperware (do not use metal) pan with graham crackers (don’t crush).

  3. Mix pudding mix with milk.

  4. Stir in Cool Whip and spread half of mixture on crackers.

  5. Top with another layer of graham crackers.

  6. Repeat layering technique so there are 3 layers of graham crackers and 2 layers of pudding.

  7. Place cake in fridge overnight.

  8. This can be made 2 days in advance before serving.
