Fry your minced garlic and spring onion until soft and browned then add the spices and fry for another few minutes before the veg stock, lime juice and then simmer to thicken and reduce.
Mix the peanut butter, sugar and soy sauce then add your broth to this mixture.
Roast your seasoned mushrooms in the oven, halfway through add the crushed peanuts.
Boil/steam your dumplings, also boil your noodles until almost cooked then serve with the hot broth and dumplings topped with the garnishes and enjoy x
