Fijian Kokoda - Fijian Ceviche
  1. Cut fish into 1 cm cubes and place in a bowl

  2. Add a pinch of salt and lime juice to cover the fish cubes

  3. Leave fish to marinate for 1 hour in a fridge, stirring every once in a while

  4. While fish marinate, prepare “miti” (Fijian for coconut-based condiment):

  5. Finely dice onion, tomato, cucumber, and capsicum and place into a bowl

  6. Add coconut milk, herbs, salt, and pepper

  7. Add FIJI FIRE

  8. Squeeze the two lime wedges into it and stir well

  9. Once the fish is well marinated:

  10. Drain lime juice and add the fish to the miti

  11. Stir all together

  12. Serve in coconut shells (or your choice of bowl)

  13. Garnish with a lime wedge and coriander

  14. Add extra FIJI FIRE to your liking

  15. Enjoy your fresh FIJI FIRE Kokoda!
