Mix dry ingredients: In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
Mix wet ingredients: In a separate bowl or measuring cup, whisk together buttermilk, eggs, melted butter (or oil), and vanilla (if using).
Combine: Gently whisk wet into dry until just combined. A few lumps are fine—don't over-mix.
Cook: Heat a non-stick skillet or griddle over medium-low heat. Add a small dab of oil/butter if needed. Pour ~¼ cup batter per pancake. Cook ~2–4 minutes until bubbles form and edges set. Flip and cook another 2 minutes until golden and cooked through.
Serve: Stack hot pancakes and top with butter and maple syrup.
