High Protein Mexican Style Chicken & Rice Meal Prep
  1. Cut chicken breast into cubes and mix with oregano, garlic powder, paprika, cumin, chilli powder, salt, pepper, and lime juice

  2. Cook chicken on medium heat for 8 minutes until golden brown, then set aside

  3. Add chopped onions and bell peppers to the pan and cook for 2 minutes

  4. Add black beans and washed basmati rice with additional seasoning to the pan

  5. Let the rice toast with the spices for 1-2 minutes to enhance flavours

  6. Add water or chicken stock and bring to a light bubble

  7. Cover and simmer on low heat for 12-15 minutes, stirring halfway through to prevent sticking

  8. Mix in the cooked chicken with chopped coriander

  9. Distribute into four equal servings and enjoy
