Cut chicken breast into cubes and mix with oregano, garlic powder, paprika, cumin, chilli powder, salt, pepper, and lime juice
Cook chicken on medium heat for 8 minutes until golden brown, then set aside
Add chopped onions and bell peppers to the pan and cook for 2 minutes
Add black beans and washed basmati rice with additional seasoning to the pan
Let the rice toast with the spices for 1-2 minutes to enhance flavours
Add water or chicken stock and bring to a light bubble
Cover and simmer on low heat for 12-15 minutes, stirring halfway through to prevent sticking
Mix in the cooked chicken with chopped coriander
Distribute into four equal servings and enjoy
