Season both sides of the pork chops generously with salt and pepper.

Place the pork chops in the skillet and sear for about 4–5 minutes on the first side, until deeply golden and caramelized.
Flip the chops, then immediately sprinkle the brown sugar evenly over the top of each one.
Drizzle the soy sauce around the pan and let it mix with the butter and sugar, creating a rich glaze.
Cook for another 4–5 minutes, spooning the glaze over the chops as they finish cooking, until the internal temperature reaches 145°F and the sugar has formed a glossy, caramelized crust.
Let rest for 3 minutes before serving so the juices settle back in.
Serve with mashed potatoes, rice, or honestly just eat them straight off the pan.
