Pull lumpia wrappers apart carefully to avoid tearing. Lay them flat on a clean cutting board.
Stack 2 to 3 wrappers at a time and cut each into 6 to 8 triangles using a sharp knife or pizza cutter.
Place cut wrappers into a large mixing bowl. Spritz lightly with avocado oil spray, then add garlic powder, smoked paprika, sea salt, black pepper, and nutritional yeast if using. Toss gently to coat evenly.
Spread seasoned chips in a single layer in the air fryer basket. Do not overlap. Work in batches if needed.
Cook at 350 degrees Fahrenheit for 5 to 7 minutes. Shake the basket at the halfway mark.
Transfer chips to a wire rack immediately after cooking. They crisp further as they cool.
