Start by preheating your oven to 180°C (350°F) and lightly grease two ramekins or one medium-sized baking dish.
In a mixing bowl, combine the oats, ground almonds, and baking powder.
In another bowl, whisk together the almond milk, maple syrup, almond extract, and plant-based yogurt until the mixture is smooth.
Pour the wet ingredients into the dry mixture and stir until everything is well combined.
Evenly distribute the mixture into the prepared ramekins or baking dish.
Top the mixture with flaked almonds and, if desired, sprinkle icing sugar on top for a golden, slightly crispy finish.
Bake in the preheated oven for 20–25 minutes, or until the top is golden and the mixture is set.
Serve warm, enjoying it as a dessert-like breakfast, and feel free to drizzle with more maple syrup or add a dollop of plant-based yogurt.
