Lokše Potato Flatbread
  1. Peel 1 pound potatoes and boil them in lightly salted water until tender. Allow them to cool down.

  2. Finely grate the cooled potatoes using a hand grater with small holes.

  3. Add 1 cup all-purpose flour and ¼ teaspoon salt to the grated potatoes, and mix until you have a smooth, non-sticky potato dough.

  4. Divide the dough into equally sized pieces.

  5. Dust the work surface with flour. Roll out each piece of dough into a thin circle, approximately 8 inches (20 cm) in diameter.

  6. Preheat an iron skillet over medium-high heat. Fry each Lokše on the dry pan, cooking both sides until golden brown.

  7. Brush the hot Lokše on both sides with melted pork lard or butter.

  8. Allow them to cool for a while, then spread with jam, roll them up, and enjoy!
