Peel potatoes, lightly wash them in water, and pad dry
Cut into cubes and put them aside in a bowl
Preheat the oil and when it is hot, fry the potatoes stirring carefully until they are done
Add salt to taste and drain all oil
Beat eggs with a fork in a bowl, add the fried potato and stir everything well
Put the pan on the fire with a little oil to prevent the mixture from sticking
Pour the mixture into the pan
Let it set on one side ( time according to your preference of juiciness)
After a few minutes, flip it over with a plate and let it set on the other side
