  1. Add boneless skinless chicken thighs to slow cooker

  2. Add soy sauce, dark soy sauce, honey, mirin, ginger paste, and garlic paste to the slow cooker

  3. Cook on High for 4-5 hours OR on Low for 5+ hours until chicken is cooked through

  4. Mix cornstarch and cold water in a small bowl to create a slurry

  5. Add cornstarch slurry to the slow cooker after chicken is done and let sit uncovered for 15-20 minutes to thicken

  6. Cook rice separately according to package directions

  7. Mix cooked rice directly with the chicken and sauce in the slow cooker

  8. For the Yum Yum Sauce: Mix together low-fat mayo, greek yogurt, and sriracha in a bowl

  9. Season sauce with salt, pepper, and garlic powder to taste

  10. Add milk as needed to reach desired consistency

  11. Portion into 8 bowls and top with chopped green onions

  12. Serve immediately or store for meal prep
