Add soy sauce, dark soy sauce, honey, mirin, ginger paste, and garlic paste to the slow cooker
Cook on High for 4-5 hours OR on Low for 5+ hours until chicken is cooked through
Mix cornstarch and cold water in a small bowl to create a slurry
Add cornstarch slurry to the slow cooker after chicken is done and let sit uncovered for 15-20 minutes to thicken
Cook rice separately according to package directions
Mix cooked rice directly with the chicken and sauce in the slow cooker
For the Yum Yum Sauce: Mix together low-fat mayo, greek yogurt, and sriracha in a bowl
Season sauce with salt, pepper, and garlic powder to taste
Add milk as needed to reach desired consistency
Portion into 8 bowls and top with chopped green onions
Serve immediately or store for meal prep
