In a mixing bowl, combine the chicken pieces with salt and lime juice. Allow it to marinate for 30 minutes, then rinse and pat dry.
Heat the oil in a pan and sauté the spice paste until it becomes fragrant, which should take about 3 minutes.
Add the bay leaves, coconut milk, and the marinated chicken to the pan. Bring the mixture to a boil.
Once boiling, reduce the heat and let it simmer until the chicken is fully cooked and the sauce has thickened slightly.
After cooking, turn off the heat and strain the chicken, reserving the sauce for basting later.
Preheat the oven broiler to high for 3 minutes.
Line a baking tray with aluminum foil and place the chicken on it.
Broil the chicken for about 3-5 minutes on each side, or until the surface is nicely charred.
Baste the chicken with the reserved sauce as needed during broiling.
Serve the chicken immediately.
