Roasted Red Pepper, Black Bean, Spinach And Feta Frittata
  1. Preheat to 200°C fan. Toss onion and garlic in a Pyrex roasting dish with olive oil, paprika, chilli flakes and seasoning. Roast 18 to 20 minutes until soft and golden.

  2. Add black beans and red peppers to the onion. Stir and return to the oven for 5 more minutes.

  3. Drop oven to 180°C fan. Transfer veg and beans into your square Pyrex dish. Spread evenly. Pile spinach directly on top.

  4. Crack eggs into a jug, season, 2 to 3 fork strokes only. Pour evenly over the spinach.

  5. Crumble feta over the surface. Scatter pine nuts on top. Bake until fully set and golden with no wobble in the centre. Cooking time depends on your dish. A smaller, deeper dish gives you thicker, chunkier slices and will take around 40 to 45 minutes. A larger, wider dish will be done in around 25 minutes.

  6. Rest 5 minutes then slice into four squares and serve straight from the dish.
