Enoki ‘scallop’
  1. Slightly chop off the bottom part of the enoki mushroom and wash thoroughly.

  2. Wrap the enoki mushroom with the seaweed.

  3. Dap both sides of the rice paper in a plate of water.

  4. Place the wrapped enokis on top of the rice paper and wrap it up again. Make sure to wrap as tightly as possible.

  5. Wet your knife and slice up the roll (1-1.5cm).

  6. In an air fryer, line a parchment paper inside.

  7. Place the ‘scallops’ inside and brush them generously on all sides with oil. Make sure not to overcrowd the air fryer to ensure the ‘scallops’ are crispy on all sides.

  8. Air fry at 190C for 20-25 minutes or until golden brown/crispy.

  9. For the sauce, add the gochujang, dark soy sauce, plum syrup, minced garlic, oat milk, mix well, and top it off with seaweed flakes and coriander.
