  1. Whisk the egg with soy sauce and water. Briefly dip two rice paper sheets at a time into the mixture — just enough to soften slightly. They should still be firm enough to hold their shape.

  2. In a pot, heat the spinach until wilted.

  3. Mix the wilted spinach, egg, feta, mozzarella, and seasonings to create the filling.

  4. Place some filling in the center of the double-layered rice paper and fold into a pocket. Repeat to make 6 pockets.

  5. Place the pockets on a baking tray, sprinkle with white sesame seeds, and bake at 200°C (fan-assisted) for 20 minutes, until golden and slightly crispy.
