Fry off the burgers and sliced mushrooms
Add stock
Add peppercorns, thyme, tarragon and tomato purée
Cook these off and add the cream cheese
Stir until a creamy sauce comes together
Sauté the spinach in olive oil and butter
Season spinach with salt and pepper
Add garlic and herb cream cheese to spinach and mix well
Serve burgers with mushroom sauce, creamed spinach, mashed potatoes and fresh chives
