Tahini Date Chickpea Blondies
  1. Preheat oven to 350F

  2. Soak ½ cup pitted dates in hot water for 15 minutes, then drain

  3. Blend the dates with 1 can (540ml) rinsed and drained chickpeas, ½ cup tahini, 1 tsp salt and 1 tsp vanilla until smooth

  4. Fold in chocolate chips and spread evenly in a parchment lined loaf pan

  5. Top with more chocolate chips and bake in the oven for 30 minutes at 350F

  6. Let cool for at least 15 minutes to firm up before slicing
