Preheat the oven to 400°F.
Add the beef and onion to a large skillet over medium-high heat and cook, while breaking up the beef, until the beef is browned, about 6 minutes.
Stir in the salt, chili powder, garlic, and cumin then cook while stirring fo about 1 minute.
Take the pan off the heat then stir in the cheddar cheese and set aside.
Lightly brush a sheet pan with olive oil and set aside.
Lay the tortillas flat then divide meat mixture evenly into the center of each one.
Roll the tortillas up tightly then place them seam-side down on the sheet pan.
Brush the taquitos with some oil then place them in the preheated oven and bake for 10 to 12 minutes or until they begin to brown and become crispy.
