Pesto Potato Chip Salad
  1. Thinly slice the potatoes, can use a mandolin but be careful 🙏🏾 spread over a lined baking tray, coat in oil and salt. Rub it in and bake @ 180-200° until crispy, flipping every 10 mins.

  2. Mix the pesto, mayo, lemon juice, nutritional yeast, salt n pepper then add the roughly chopped herbs and veggies along with the cooled potato chips.

  3. Fold everything through so it's almost all coated but not completely, garnish with pine nuts and micro greens then serve and enjoy!
