Stella Bennett I had 370g of left over mash potato.

Added a little shake of Salt and Mashed in 50g of butter.

And then just gradually add in self raising until it comes together to make a dough. Was a little bit short of 100g for this amount of mash.

On a well floured surface Pat out into a circle about 2 thirds of a cm thick (I got 2 small dinner plate size circles out of this batch) cut into quarters and onto the SP. They had about 5 mins before sprinkling more flour on the tops and flipping for the same time on the other side.

You just want that nice crust.

Nice straight off the plate with butter but I’ve stored ours for breakfast tomorrow, will fry them with sausages and eggs.
