Spinach & Artichoke Rice Casserole
  1. Preheat oven to 325ºF. Lightly spray a 9x13-inch baking dish with cooking spray.

  2. In a large bowl, beat together cream cheese, ricotta, milk, garlic powder, and onion powder.

  3. Add cooked rice, spinach, artichoke hearts, 1-½ cups shredded mozzarella cheese, and 1 cup shredded parmesan cheese. Mix well.

  4. Spoon rice mixture into baking dish. Top with remaining mozzarella and parmesan cheese.

  5. Bake uncovered for 40 to 45 minutes.
