Gluten-free Almond Joy Mason Jar Cookies
  1. Dry Mix Ingredients (layer in this order):

  2. 1 ½ cups almond flour

  3. 1 teaspoon baking powder

  4. ¼ teaspoon salt

  5. ½ cup light brown sugar (packed)

  6. ½ cup granulated sugar

  7. 1 cup sweetened shredded coconut

  8. ½ cup semi-sweet chocolate chips (use gluten-free certified)

  9. ½ cup chopped almonds (toasted for best flavor, optional)

  10. 👉 Tip: Tap down each layer gently and wipe the inside of the jar with a clean towel for clean lines.

  11. 🥣 Wet Ingredients to Add Later:

  12. ½ cup unsalted butter (softened or melted)

  13. 2 large eggs

  14. 1 teaspoon vanilla extract

  16. Preheat oven to 350°F (175°C).

  17. In a large bowl, beat together ½ cup butter, 2 eggs, and 1 tsp vanilla.

  18. Add contents of jar and stir until combined.

  19. Scoop tablespoon-sized balls onto parchment-lined baking sheet.

  20. Bake 10–12 minutes until golden on edges. Cool on sheet 5 minutes before transferring.
